Vegan and Raw Soup recipes: Squash & Carrot and A Bowl of Greens

We have a couple vegan soup recipes to share with you! One is cooked and the other is raw! As the weather warms up, you might like to try a cold soup…if not get making this Squash and Carrot soup before squash goes completely out of season.

 

Squash and Carrot Soup

Ingredients:

  • 1 onion
  • 1 leek
  • 2 sticks celery
  • 1 clove garlic
  • 1 large carrot
  • ½ acorn squash
  • 1 teaspoon miso
  • ½ teaspoon cumin
  • Oil
  • Black pepper

Instructions:

Chop all ingredients and saute onion, leek, garlic and celery in a pan in a little oil (coconut or olive oil if you don’t like the slight coconut taste). Once golden add cumin, carrot and squash and cook for another minute then cover all ingredient with water and add miso. Simmer until soft. Blend in high powered blender. And serve hot with plenty of black pepper.

 

Bowl of Greens

Ingredients:

  • ½ bag spinach
  • 1 avocado
  • 1 carrot
  • 3 sticks celery
  • 4 broccoli florets
  • Large handful of coriander leaves
  • Smaller handful of parsley leaves
  • Pinch of sea salt

Instructions:

Roughly chop all ingredients and add to a high-powered blender with the spinach last. Partly fill with water and blend until smooth. You can add more water if you prefer a runny texture. Serve chilled.
