We recently baked a gluten free, sugar free banana bread with walnuts and sultanas! It was so delicious, we wanted to share the recipe with you but we often bake without any guidelines! Here’s what we (think) we did…

Healthy Banana Bread Recipe - sugar free & gluten free

Ingredients:

  • 3 ripe large bananas mashed
  • 1 large heaped tablespoon of coconut oil
  • 2 tablespoons of almond flour
  • 1 tablespoon of coconut flour
  • 1 teaspoon of vanilla essence
  • a handful of sultanas
  • a handful of broken walnuts
  • 1 level teaspoon of baking powder
Mix all the ingredients together. The batter should be loose. If it’s too thick, the cake will be dry so add more banana and/or more fat. (yeah, we said it was guess work!)

Grease a baking tin and pop the mixture in the tin and bake for around 20 mins at 180 degrees. It’s ready when the knife comes out cleanly from the centre of the cake.
